Corn Custard

 
 

 

 
 

4 tablespoons chopped green pepper
2 tablespoons chopped onion
1 1/2 tablespoons fat
1 1/2 tablespoons flour
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup canned cream
2 slightly beaten eggs
#2 can whole grain corn (drained)
6 small pieces Pimento

Cook green pepper and onion in fat 5 minutes

blend in flour, salt & pepper

stir in milk

heat to boiling point stiring constantly

stir into beaten eggs

add corn

put Pimento in bottom of greased baking dish (flour dish after greasing)

pour in corn mixture

set dish in pan of hot water

bake in moderate (350°) 45 minutes

serves 6
